Nice I’m also enjoying a local “hazy”IPA from Charlestowne fermentory out of Charleston SC. Head brewer was at Trillium for a while it shows. Awesome beer.

What’s that? An omelette with a cheese and mushroom filling?
What cheese?
I also see a cherry tomato lurking at the top under the avocado.

Yup, Swiss, mushrooms, cherry tomatoes. The “what we had in the fridge” special

Minus the avocado.
I’m down with that.I now need breakfast food.
Thankfully I’m popping out to the butchers in a few hours which mean steaks, sausages, bacon and eggs. Yay.
Have you tried a Parmesan omelette?

It’s easy and tasty, either grate or take some grated Parmesan and cover the base of a cold small frying pan (no oil or butter), now turn on the heat, about moderate and once the cheese has melted, add your beaten egg or two. Cook as desired and then fold over. The cheese makes a nice crispy crust.
Beautiful.

It’s so good and so easy. Just make sure the base of the pan has got a good dusting over the whole surface of Parmesan before turning on the heat and off you go.
